About So Doh! Sourdough Renvyle
In 2021 I set up a little Sourdough Microbakery in Renvyle, Connemara. My aim was to supply my local community with #realbread. I try to use as much organic/Irish/seasonal ingredients as I can. Real sourdough bread is made with 3 ingredients.. flour, water & salt, naturally fermented & slowly proofed. My dough is stretched, cut & shaped by hand. Once shaped each loaf is placed in a banneton & slowly proofs in the fridge over night. In the morning just before baking I score (etch with a blade) a sheaf of wheat on each loaf.
