I founded Coco Milis in Donegal in 2022 as a way to share a different approach to chocolate — one rooted in quality, transparency, and care for both people and planet. After discovering how far removed most chocolate is from its origins, I became passionate about making chocolate from scratch, slowly and thoughtfully. Coco Milis is a small-batch, bean-to-bar chocolate company. I work with single-origin cacao sourced from Nicaragua, carefully roasting, grinding, and tempering each batch myself.
